We stumbled across a great recipe in the March 2011 issue of Men's Health, and I figured this time I would document the making of this amazingly handy and delicious staple. Let me know what you think! 

Easy Pulled Pork
adapted from Men's Health

2lb boneless pork shoulder, cut into 1-inch chunks
1 large white onion, quartered
5 garlic cloves, lightly crushed
2 bay leaves
1 tb ground cumin
salt & pepper

1. combine all the ingredients in a large pot and add water to cover. bring to a boil over high heat, and skim off any foam. partially cover and adjust the heat so the mixture simmers steadily.

2. cook until the meat is tender, about an hour. let it cool. remove the meat from the liquid and shred it with your fingers. season with salt and pepper.

after shredding, you can use the meat for a few meals. examples include bbq sandwiches, carnitas tacos, and soups/stews. yum!
